This stack of Rufus-ized ham and eggs will make you wanna glad to be at the top of the food chain. Stacked high and ready for anything, this is why the word "yummy" exists.
- Get a non-stick pan to medium heat. Add 1 Tbsp butter. When butter is melted and hot, add eggs to pan. As soon as sides of eggs turn opaque, cover pan and lower heat. Cook for 4 minutes and carefully move eggs to plate. Dust top of eggs with Rufus Teague Meat Rub.
- Turn pan to medium-low heat. Place ham in 2 piles in pan. Put half of the cheese on each pile of ham. Cover and cook for 4 min. Carefully set an egg on top of each cheese. Cover and cook 1 more minute.
- Assemble the sandwich. Coat bottom bun with small amount of BBQ sauce. Place one ham/cheese/egg pile on bottom bun. Add second ham/cheese/egg pile on top. Drizzle with remaining BBQ Sauce, add arugula and top bun.
- Do a few jaw stretches and get ready to live the good life.
