No meat? No problem. This jackfruit sandwich can satisfy even a hardcore BBQ fan.
- Preheat your oven to 400 degrees.
- In a pan heat some olive oil on medium and throw in your chopped onion and garlic to cook down.
- Drain your jackfruit and and throw into the pan with onion and garlic. Add vegetable stock and simmer for about 5 minutes, or until you can pull or smash up jackfruit to look like pulled pork. Cook for another 5 minutes or so and then transfer the jackfruit to a baking sheet or pan and bake for 10-15 minutes.
- Remove from oven and coat with Slim N' Sweet BBQ Sauce. Serve on a brioche bun and top with some chopped purple cabbage or a slaw of your choosing.
