Nothing complements BBQ like baked beans. And no beans compare to these. Yay for beans.

Ingredients

  • 1 lb white beans, pre soaked
  • 5 cups chicken stock
  • 1 small yellow onion, diced
  • 1 garlic clove, smashed
  • salt
  • ground black pepper
  • ¾ cup ketchup
  • ¾ cup Rufus Teague Whiskey Maple BBQ Sauce
  • 1 pinch smoked paprika
  • ½ cup brown sugar
  • 1 tablespoon molasses
  • 2 tablespoons bourbon

Instructions

  1. Add pre-soaked beans to a large pot. Pour in the chicken stock, onion, garlic, salt and pepper, ketchup, BBQ sauce, paprika, brown sugar, molasses, and a little bit of olive oil. Mix together well and turn the heat to high.
  2. When it begins to boil, reduce the heat to low and partly cover with a lid and let simmer. Simmer for 1 hour, adding water if the beans absorb the liquid. Keep simmering for another hour until the beans get nice and tender and the sauce thickens. After 2 hours test doneness of beans. If more time is needed, simmer for another 30 min to one hour.
  3. When the beans are soft, turn off the heat and stir in the bourbon. Taste again here to see if you need to add more salt or pepper, adjust accordingly.
